How To Make Raita Cucumber Cups
- Prepare cucumbers – First, choose your favorite variety of cucumbers. Then, cut them into slices, approximately 1 and 1/2 cms width. Scoop out the insides of the cucumbers which can be added to the raita filling.
- Make raita filling – The filling is actually the classic yogurt salad. It’s a basic mixture of cooling yogurt, cucumbers and tomatoes. You can also add some chopped green chilies if you like.
- Assemble cucumber cups – I highly recommend assembling the cucumber cups just before serving. You can easily store raita and cucumbers in the refrigerator until ready to assemble. All you need to do is just add the raita to the cups, garnish and serve.

Refreshing raita cucumber cups makes for the perfect appetizer!
Ingredients
- 2 large cucumbers
- 3/4 cup thick Greek yogurt
- 1 teaspoon ground cumin (cumin powder)
- 1/2 teaspoon dried chili flakes
- 1 tablespoon chopped tomatoes
- 1 sprig of coriander (cilantro) leaves (optional)
- Salt to taste
- Mint leaves, to garnish
Instructions
- Remove the ends and cut each cucumber into 1-inch rounds. You can use a vegetable peeler to score the length of cucumbers to create a stripped effect.
- Using a small spoon, scoop out the seeds from the center of each cucumber round to form a cup.
- To make the raita filling, combine together yogurt, ground cumin, red chili flakes, tomatoes and coriander (cilantro) leaves in a large bowl. Season with salt.
- Spoon the mixture into the cucumber cups.
- Garnish with mint leaves.
- Chill until serving time.
