Who doesn’t love the extraordinary sweetness and deliciousness of classic Indian sweets? The vibrant sugar laden addictive treats are obviously an introduction to the world of Indian inspired desserts and sweet treats. Jalebis, ladoos, gulab jamuns – all take you to a world of incredible sweetness.
Paneer ladoo. The sweet mix of paneer or Indian cheese and condensed milk rolled into delicious sweet treats. Typically a classic sweet made with chickpea flour, ladoo, has been reinvented countless times over the years. And this version with paneer is obviously healthier and protein packed with fancier ingredients.
Paneer Ladoo Recipe
- Make paneer. Making homemade paneer is easy, however, you can also opt for the store bought version. Like all kinds of cheese, the base of paneer is milk. First, boil milk. While the milk is boiling, add white vinegar or lemon juice that acts as the curdling agent. When milk curdles, the milk solids will separate from liquid. Pass this curdled mixture through a fine sieve lined with a muslin cloth. The liquid or whey can be used in curries and soups. Now, squeeze out all the liquid from the milk solids. And then you have fresh homemade paneer.
- Cook paneer with condensed milk. Using your hands, knead paneer to make it soft and lump free. This will also ensure soft paneer ladoo. Now place paneer and condensed milk in a pan over low heat. You’ll need to cook paneer until the mixture dries and you get thick mixture. The sweetness of ladoo comes from condensed milk. You can also add some powdered sugar if you like. To flavor the ladoo, add in a little ground cardamom.
- Roll out paneer ladoos. Before rolling out small balls, stir in some chopped nuts like almonds, cashew nuts or pistachios. You can also opt for sultanas or cranberries.

Heavenly Indian sweet made with paneer or Indian cheese
Ingredients
Homemade paneer (or 250 g store bought paneer):
- 2 liter full fat milk
- 2 tablespoons fresh lemon juice or white vinegar
- 1 cup cold water
Paneer ladoo:
- 1/2 cup condensed milk
- 1/2 teaspoon ground cardamom
- 2 tablespoons chopped nuts (almonds, cashew nuts or pistachios), fried in ghee (optional)
- 1 tablespoon sultanas, fried in ghee
Instructions
- Heat milk in a large heavy bottomed pan over medium-high heat. Stir occasionally.
- When milk starts to boil, add lemon juice (or vinegar). In about 2-4 minutes, the milk will curdle and the curds (paneer) separates from whey (yellow liquid). Remove from heat.
- Place a fine mesh sieve over a large bowl.
- Place a muslin cloth or cheesecloth in the sieve.
- Pour curdled mixture into the sieve. Bring the ends of the muslin cloth together and squeeze out excess liquid. You will get thick paneer. Alternatively, you can use store bought paneer.
- Place paneer in a wide bowl.
- Knead to make it smooth and soft. Transfer to a large frying pan.
- Add condensed milk.
- Place the pan over low heat.
- Stir and cook until the mixture dries up and turns thick.
- Turn off heat.
- Stir in ground cardamom, and sultanas and nuts (if using).
- When the mixture cools down slightly, roll into balls.
Notes
- You can add a little powdered sugar for extra sweetness
- The whey or yellow liquid is highly nutritious and can be used in curries and soups
- If using store bought paneer, crumbled and knead until soft
