Aside from the fact that this toast is super easy to make, it’s also loaded with veggies to bring you a balanced meal. Eggs combined with all your favorite vegetables to create the ultimate fried egg filling. Delicious!
How to make Korean street toast
Start with making the fried egg filling. I used about 2 eggs to make two sandwiches, and combined it with shredded veggies like cabbage, carrots and scallions (spring onions). Vegetables are a must in Korean cuisine, and this sandwich is not an exception. Again, you’ll need plenty of veggies, and eggs act as a binding factor in this recipe.
Now, heat a little butter or oil in a frying pan, and add the egg mixture. Spread the mixture into a rectangular shape and cook both sides. While the eggs are cooking, spread a few slices of bread with butter. This forms the base of this Korean street toast.
When the eggs come out of the pan, lightly toast the bread slices to give it a brown hue and crisp texture. Although white bread is used in the traditional recipe, I have opted for multigrain loaves to add some wholegrain goodness. Apart from the fried egg, you’ll also need a couple of slices of ham and cheese to create the classic toast. This Korean street toast is a true combination of sweet and savory flavors, so a touch of tomato sauce and a sprinkle of sugar are absolutely necessary.

Korean Street Toast | Breakfast Egg Sandwich | Video
There’s nothing better than a warm morning toast packed with the goodness of vegetables and eggs. Here’s the ultimate breakfast sandwich recipe!
Ingredients
- 2 large eggs
- 1 cup shredded vegetables (cabbage, carrots and scallions or spring onions)
- Salt and pepper, to taste
- 4 bread slices (white for classic recipe or wholemeal)
- 100 g butter
- 2 teaspoons white sugar (optional)
- 2 tablespoons tomato ketchup (sauce)
- 2 slices ham
- 2 slices cheese
Instructions
- Crack eggs into a large bowl.
- Add vegetables. Toss to coat vegetables with eggs. Season with salt and pepper.
- Meanwhile, heat 1 teaspoon butter in a frying pan over medium-low heat. Pour in egg mixture. Spread it thinly and shape into a rectangle if possible. Cook for about 2 minutes or until browned.
- Cut the fried egg into halves and flip over to cook the other side. Remove from pan.
- Wipe the pan clean.
- Spread both sides of the bread slice with butter and place it on the pan. When one side is crisp and brown, flip over to brown the other side. Repeat with the other slices. Set aside.
- To assemble, place one bread slice on the work surface. Top with fried egg. Sprinkle with 1 teaspoon sugar (if using). Top with tomato ketchup (sauce), one slice of ham, and one slice of cheese. Place another bread slice on top. Repeat with the remaining bread slices and fried egg.
Notes
- White bread is used in the traditional recipe, but you can sub with wholemeal, multigrain or gluten free bread
