I’m so excited to bring you this super quick and easy pasta recipe made with pasta roma spirals. All you need to do is cook the pasta just like your regular pasta and toss in the beautifully rich tomato based sauce.
How To Make Easy Tomato Pasta
Start with cooking the pasta until al dente. Don’t forget to check the package instructions for the cooking time.
While pasta is cooking, you can make the sauce. Sauté some fresh minced garlic in olive oil, and fry some spinach until wilted. At this stage, you can also add in your favorite chopped veggies.
Add diced tomatoes alongside a little reserved pasta water and basil leaves. Season with salt and pepper. Give this a quick stir. Now you add in cooked pasta and grated cheddar. Stir again and let it heat through.
Just before serving, I like to top this tomato pasta with plenty of basil leaves, a few cherry tomatoes and cheese.

Ingredients
- 300 g packet pasta
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 50 g spinach
- 400 g canned diced tomatoes
- 2 tablespoons chopped fresh basil
- 1/2 cup grated cheddar
- Salt and pepper, to taste
- Basil leaves, to garnish
- Cherry tomatoes, to garnish
- Grated cheddar, to garnish
Instructions
- Cook pasta in a large saucepan of salted boiling water following the packet directions or until al dente. Reserve 3/4 cup pasta water. Drain excess water and set aside.
- Meanwhile, heat oil in a large frying pan over medium heat. Add garlic. Sauté, stirring, for a minute or until al dente.
- Add spinach. Sauté, stirring, for a few seconds or until wilted.
- Add canned diced tomatoes, basil leaves and 1/2 cup reserved pasta water. Stir to combine. Season with salt and pepper.
- Bring to a boil. Simmer for 3 minutes.
- Add cooked pasta and grated cheddar. Gently toss to combine. Heat through.
- Divide pasta among serving plates. Top with basil and cherry tomatoes, and sprinkle with cheddar to serve, if desired.
Notes
- You can add more vegetables like mushrooms, broccoli, pumpkin and sweet potatoes, or your favorite protein, if you like.
