Christmas tree cookies with cute candy lights. Honestly, I adore these cookies. The stained glass feature is totally the right way to make them more festive. The very basic cookies are turned into a showstopper with a simple magic. Hard candies or lollies are melted to create a beautiful glass feature to resemble the Christmas lights. Let me tell you, these cookies are so good. Gorgeous!
How To Make Christmas Tree Cookies
Start with the cookie dough. I use a mix of all purpose (plain) and self raising flours in this recipe. Sift the flours into a bowl alongside salt. Give it a quick whisk to mix the flours.
In another bowl, beat together softened butter and sugar. This will take about 3-4 minutes. Once the mixture is pale and creamy, add in egg and vanilla extract. At this stage, you can add the almond extract if you are using. Beat all the ingredients until well combined.
Now add in half of the sifted flour and mix with a spoon. Add in remaining flour and mix again. Knead it to make a smooth dough. Roll out, chill, cut out Christmas trees and light holes and fill the holes with hard candies. Bake and enjoy!

Super cute Christmas tree cookies to adorn your festive table!
Ingredients
- 1 cup all purpose (plain) flour
- 1 and 1/2 cups self raising flour
- 1/4 teaspoon salt
- 250 g butter, softened
- 1/2 cup granulated (caster) sugar
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 1-4 teaspoon almond extract (optional)
- ¼ cup crushed red hard candies or boiled lollies
- ¼ cup crushed green hard candies or boiled lollies
Instructions
- Line two large baking trays with parchment or baking paper. Set aside.
- Place self raising flour, all purpose (plain) flour and salt in a medium bowl. Whisk to combine. Set aside.
- Place butter and sugar in a large bowl. Using an electric hand held or stand mixer, beat for about 2-3 minutes or until pale and creamy.
- Add egg, vanilla extract and almond extract (if using). Beat until just combined.
- Add half of flour, and stir with a wooden spoon. Add remaining flour, and stir again until the mixture just comes together.
- Turn the mixture onto a floured surface and knead until smooth. If the dough is too soft and sticky, add 1 or 2 tablespoons of flour.
- Divide the dough into two equal portions. Place the dough in the baking trays.
- Using a lightly floured rolling pin, roll out into 3mm thick discs. Cover with plastic (cling) wrap and refrigerate for 1-2 hours.
- When the cookies are ready to bake, preheat oven to 180 C or 350 F.
- Using a tree shaped cookie cutter, cut out trees from the dough.
- Remove the extra dough and roll it again into 3mm thick discs. Cut out more trees from the dough.
- Arrange them 3-inches apart in a single layer on the baking tray.
- Using the tip of a round piping nozzle, cut out two small circles from each cookie tree.
- Fill the holes with red and green crushed candies or lollies.
- Bake for 10-12 minutes or until lightly golden. Cool.
- Once cooled, store in an airtight container for up to 2 days. For longer storage, refrigerate in an airtight container for a week.
Notes
- Almond extract is optional in this recipe
- The rolled out dough can be refrigerated for up to 2 days
- Do not overfill the holes with crushed candies as the candies will melt and expand
- Make sure you line the baking sheets with baking paper as melted candies may stick to the bare pan
