How To Make Cajun Turkey
Start with brining your turkey. You can get the full instructions here. Brining the turkey a day ahead seals in the flavorful juices and prepare it to absorb all the amazing flavors.
Making cajun turkey is a simple straightforward process. All you need is cajun seasoning and butter. With cajun seasoning, you have two options – homemade or store bought. I have opted for store bought seasoning, just to keep the recipe super simple.
Make sure you melt the butter and then combine it with cajun spices to make a beautiful paste. Rub this paste all over the turkey including ‘under the skin’.
Place the marinated turkey on a wire rack in a roasting pan. You can also place the turkey on a bed of veggies which will in turn absorb all the delicious juices from the turkey to make flavorful gravy. I also like to pour in some stock or broth in the base of the roasting pan to keep the turkey moist and succulent. Don’t forget to baste the turkey every 30 minutes with the juices from the pan.

Cajun Turkey | Nish Kitchen
Succulent and moist cajun turkey flavored with classic cajun seasoning. Absolutely delicious!
Ingredients
Cook Turkey:
- 4 kg whole turkey
- 1 cup melted butter, cooled
- 2 and 1/2 tablespoons cajun seasoning
- 1 large lemon
- 4 cups diced vegetables (onions, carrot, potatoes)
- 1 sprig of rosemary
- 2 cups chicken broth (stock)
- Salt to taste
Gravy:
- 2 tablespoons butter
- 1 dried bay leaf
- 1 teaspoon cumin seeds
- 2 tablespoons corn flour
- 1 tablespoon cajun seasoning
- 2 cups chicken stock (broth)
- Juice from the roasting pan
Instructions
Brine turkey:
- To brine turkey, follow the instructions here.
Cook turkey:
- Combine together butter and cajun seasoning to make the marinade. Season with salt. Set aside.
- Remove turkey from brine. Pat dry with paper towel. Remove neck and giblets if needed. Tuck wings under turkey.
- Place the oven rack one level below the center of the oven. Preheat oven to 220 C or 450 F.
- Carefully separate the skin from the turkey breasts without tearing it. Rub the marinade all over the turkey, both outside and inside. Stuff the turkey skin with 2 tablespoons marinade.
- Place lemon inside the cavity. Tie turkey legs with kitchen twine.
- Transfer turkey on to a large roasting pan with roasting rack. Place vegetables in the roasting pan and pour in chicken stock (broth).
- Place the roasting pan in oven and bake for 2 hours. Baste the turkey every 30 minutes with juices from the roasting pan.
- Reduce heat to 180 C or 350 F and bake for another 30 minutes. Ideally, the internal temperature of the cooked turkey needs to be about 70 C or 150 F.
- Remove from oven. Let turkey rest for 30 minutes and then carve. Serve with your favorite sides.
Make Gravy:
- Heat butter in a large pan. Add bay leaf and cumin seeds. Stir fry for few seconds.
- Add corn flour. Stir fry for 1 minute.
- Add cajun seasoning. Stir fry for few seconds.
- Add chicken stock (broth). Add juice from roasting pan along with cooked vegetables.
- Bring to a boil. Simmer for about 20-30 minutes or until it reaches a pouring consistency.
- Strain.
- Slice turkey and serve with homemade gravy.
