Soft and pillowy with crispy texture on top – these are the qualities that make an ideal naan. Do you agree? Although this classic is not so popular in India, it’s a restaurant favorite outside the country. So, whenever I’ve free time, I hone my kneading skills to make the perfect homemade naan.
And here’s the latest addition to my ever-growing list of naan recipes – bullet naan. A fiery version of naan topped with plenty of jalapeños and coriander (cilantro) leaves. Beware, this flatbread is not for the faint-hearted.
Bullet naan ingredients
I like to start with my favorite butter naan recipe and add the unique toppings to create this fiery naan. First, get a large bowl and gather all the ingredients for the dough. You’ll only need a few basic pantry ingredients like flour, yeast, butter, yogurt and milk. Make sure you add in warm milk to activate yeast.
Mix everything together to form a very sticky dough. Place the bowl in a warm spot in your kitchen and wait for it to double in size.
Once risen, you’ll need to knead the dough, form a little ball and flatten it into an oval or round shape. Now comes the unique part of making this bullet naan. Top with plenty of jalapeños and coriander (cilantro) leaves.
To add to the aesthetic appeal of these flatbreads, I also sprinkled some black and white sesame seeds. However, it’s totally optional.
Let’s cook the perfect naan
The key to creating the perfect naan is, obviously, patience and practice. I used my grill pan to create those beautiful marks on one side and crispy brown bits on the other side. Perfect!

A fiery update to the all-time favorite naan with the addition of jalapeños and coriander (cilantro) leaves. Make this restaurant favorite at home with this recipe.
Ingredients
- 4 cups all-purpose (plain) flour
- 1/2 cup natural yogurt
- 4 tablespoons melted butter
- 2 teaspoons dried yeast
- 3/4 - 1 cup warm milk
- 1 teaspoon salt
- 1/4 cup chopped jalapeños or green chilies
- 1/4 cup chopped coriander (cilantro) leaves
- 2 tablespoons white sesame seeds (optional)
- 2 tablespoons black sesame seeds (optional)
- 50 g melted butter, extra, for brushing the cooked naans
Instructions
- Place flour, yogurt, butter, yeast, milk and salt in a large bowl.
- Mix together with a spoon, then use clean hands to bring everything together and form a sticky dough.
- Cover and place in a warm spot for 45 minutes or until doubled in size.
- Dust a clean work surface with flour, and tip out the dough.
- Knead for two minutes to bring everything together.
- Divide the dough into 8 equal portions.With your hands, pat and flatten the dough to shape each portion into ovals or rounds, roughly 3mm thick.
- Top generously with jalapeños (or green chilies), coriander (cilantro) leaves, white sesame seeds and black sesame seeds.
- Place a grill pan or cast iron pan over medium-high heat.
- Once hot, place naans, one at a time, and cook for 1 to 2 minutes on each side.
- Brush the flatbreads with melted butter.
- Serve with your favorite curry.
