Best Cinnamon Rolls Recipe
The recipe consists of three different parts – making the dough, combining the sugar cinnamon mixture and cream cheese frosting. Again, this yeasted dough requires proofing twice (2-3 hours in total) to attain the best results.
First, the dough. The first and foremost step is obviously proofing the yeast before adding the other ingredients of the dough. All you need to do is combine together active dry yeast, lukewarm milk and a little sugar in a bowl. Set this aside until it starts to foam.
To prepare the dough for this best cinnamon rolls recipe, we’ll be using the electric stand mixer with the dough hook attachment. Even though this makes the process easier, you can always knead with your hands. However, it may require longer kneading time.
To the bowl of the mixer, add all the dry ingredients including flour, sugar and salt. Use a wooden spoon to give this a quick stir. To this, add all the wet ingredients – egg, vanilla extract and butter. And finally, the bubbly yeast mixture.
Place this on the stand mixer and knead for about 5 minutes. Cover and place this dough in a warm spot to rise. This will take about 1-2 hours. Punch down the dough (this is very important) and transfer onto a floured surface. Roll out. This should be about 1/2 cm thick.

Dough:
- 2 teaspoons instant dry yeast
- 3/4 cup lukewarm milk
- 1 teaspoon sugar
- 3 cups bread flour
- 1/4 cup granulated (caster) sugar
- 1 teaspoon salt
- 1 egg, at room temperature
- 1 teaspoon vanilla extract
- 40 g melted and cooled unsalted butter
- 1/2 cup heavy (thickened) cream
Filling:
- 1/2 cup dark brown sugar
- 60 g unsalted butter, at room temperature
- 2 tablespoons ground cinnamon
Cream cheese frosting:
- 100 g cream cheese, at room temperature
- 1/2 cup icing (powdered) sugar
- 3 tablespoons softened unsalted butter
- 1/2 teaspoon vanilla extract
Instructions
- Place yeast, milk and sugar in a small bowl. Stir to combine. Set aside for about 10-15 minutes or until foamy and bubbly.
- Meanwhile, place flour, 1/4 cup sugar and salt in the mixing bowl of the stand mixer. Using a wooden spoon, stir to combine.
- Add egg, vanilla extract, butter and yeast mixture.
- With the dough hook attachment on an electric stand mixer, knead for 5 minutes (or knead by hand for 15 minutes).
- Transfer the dough to an oiled bowl and place in a warm spot to rise, for about 1-2 hours or until double in size. (You can also let the dough rise in the refrigerator overnight, for about 8 hours).
- Dust the work surface and rolling pin lightly with flour. Punch down and turn the dough onto the work surface.
- Roll the dough out into a rectangle with 1/2 cm thickness.
- Spread with the sugar-cinnamon mixture.
- Starting from the long edge, roll the dough into a tight spiral. Pinch the spiral closed.
- Using a serrated knife or dental floss (for the perfect cut), cut into 9 equal sized rolls.
- Transfer into a 9x13 inch baking dish. Cover with plastic wrap.
- Place in a warm spot and let them rise for 45 minutes to 1 hour or until double in size and the rolls are touching each other.
- Preheat oven to 180 C / 350 F. Bake for 25 minutes or until the rolls are golden on top and puffy.
- To make the frosting, use an electric mixer to beat cream cheese, sugar, butter, and vanilla extract.
- Frost the cinnamon rolls generously with the frosting. Serve warm.
