For those who don’t know, this recipe uses basic ingredients like flour and dried fruit alongside your favorite liquid.
The flavor of the cake comes from the liquid used ranging from iced coffee to baileys. Honestly, it’s a fantastic way to customise the flavor to add depth and variety to this old fashioned cake. While iced coffee is the most popular option, you can also go more experimental with baileys or your favorite alcoholic drink.
Key Ingredients In Christmas Fruit Cake
- Dried fruits – This is the quintessential ingredient of Christmas cake. However, you can use a mix of fruits and nuts in this recipe.
- Iced coffee – I opted for iced coffee, but orange or apple juice and even baileys are great options.
- Flour – Use self raising flour. You can also opt for all purpose (plain) flour with baking powder.
How To Make 3 Ingredient Christmas Cake
Soak dried fruits – You will need to start making this cake a day ahead. Soak all the dried fruits in iced coffee or your favorite liquid for about 6-8 hours.
Bake the cake – The fruits will soak up all the liquid overnight. Now, all you need to do is stir in the flour. Make sure the ingredients are well combined. Finally, transfer this to a deep cake tin and bake.

Ingredients
- 1 kg mixed unsweetened dried fruit
- 700 ml iced coffee
- 2 cups self raising flour
Instructions
The Day Before Baking:
- Place mixed dried fruit in a large bowl.
- Pour in iced coffee.
- Make sure the fruits are fully submerged in the liquid.
- Cover and allow to soak in the refrigerator for at least 8 hours or overnight.
Prepare The Cake Batter:
- Preheat oven to 180 C or 350 F before preparing the batter. Grease and line the base and sides of a 23 cm deep cake tin. Set aside.
- Add flour to the soaked fruit mixture.
- Fold in gently. Make sure all the ingredients are evenly incorporated. The batter will be thick.
Bake:
- Transfer batter to the cake tin.
- Use a spatula to smooth batter into an even layer.
- Place the cake tin on the oven rack placed in the center of the oven.
- Bake for about 1 hour or until the batter is set, the top is golden brown, and a skewer inserted into the center of the cake comes out clean. If the top browns too quickly, cover with an aluminum foil and continue baking.
- Once the cake has cooled, carefully remove the cake from the cake tin before turning onto a wire rack to cool completely.

- Gluten free cake - For a gluten free version of this cake, substitute regular self raising flour with gluten free self raising flour.
- Cake or muffins - This fruit cake can also be prepared in muffin tins to make mini Christmas fruit muffins.
