Prioritizing a good healthy meal everyday of the week is not easy, that’s when sandwiches come to your rescue.
Enter simple plant based sandwiches. These sandwiches are a great way to balance your healthy dose of vegetable intake suppressing your craving for unhealthy fats and sugar. Plus, they are easy to assemble and are loaded with the green goodness of cucumbers.
Key Ingredients In Cucumber Sandwiches
- Cucumbers – English cucumbers are perfect in this recipe, however, you can use your favorite variety. The cucumbers are cut into very thin rounds to achieve the right texture and taste.
- Cream cheese – You will need to use a spread to prevent soggy bread. Butter is a great substitute.
- Dill – The combination of cream cheese and dill leaves is unbeatable.
- Bread – White, wholemeal, or even whole wheat English muffin. Remove crusts. I prefer white bread as it creates a stunning contrast with the green cucumbers.
How To Make Classic Cucumber Sandwiches
Prep bread – Whether you use white, wholemeal or multigrain bread, remove the crusts.
Prep cucumbers – You can use peeled or unpeeled cucumbers in this recipe. Cut them into thin slices, approximately 1/8-inch thick rounds.
Make the cream cheese mixture – Mix whipped or spreadable cream cheese, the secret hidden deliciousness, with chopped dill leaves.
Assemble the sandwiches – The bread slices get a thin layer of cream cheese mixture on one side, and they are topped with cucumber slices. Top with another bread, and you have no-cook sandwiches for any time of the day.
Classic Cucumber Sandwiches
Classic tea sandwiches featuring layers of cream cheese and cucumbers. Perfect as a snack with afternoon tea or as a light lunch.
Ingredients
Cream cheese mixture:
- 125 g whipped or spreadable cream cheese
- 1 tablespoon chopped dill leaves
Sandwiches:
- 8 bread slices (white, wholemeal or multigrain)
- 1 large cucumber, preferably English cucumber, cut into 1/8-inch thick rounds
- 1 teaspoon fresh lemon juice
- Salt to taste
Instructions
- To make cream cheese spread, combine together cream cheese and dill leaves in a small bowl. Set aside.
- Remove crusts from the bread slices. Set aside.
- Place cucumber slices in a large bowl. Sprinkle with salt. Let sit for 15 minutes. Discard the excess water and pat dry with paper towel.
- Add lemon juice. Toss. Set aside.
- Spread cream cheese mixture over one side of 4 bread slices.
- Layer cucumber slices ( 9 for each sandwich) on top.
- Top with the remaining bread slices, cream cheese sides down.
- Press down gently.
- Cut in halves. Serve.
Notes
- Easy prep - You can make these sandwiches a day ahead, and store in the refrigerator.
- Bread - You can toast the bread slices if you like.
- Variations - Add mayonnaise to cream cheese mixture.
- More flavor - Add garlic powder.
