Honestly, the thrill of perfecting a recipe is second to none, but the culinary experiments and trials behind the scene takes effort and time. But, on the other side, it brings the “perfect” recipe to you so you’ll never need to comb the internet for hours to create unique and tasty dinners for your family.
Stroganoff meatballs. One of my most favorite dishes transformed into delicious meatballs. I’m a huge fan of this dish with lip-smacking creamy stroganoff sauce. The ingredients? Minced meat, mushrooms, sour cream, dijon mustard and herbs. All the amazing flavors in one dish!
Stroganoff Meatballs Recipe
Make meatballs – First, the meat. You can choose your favorite minced (ground) meat in this recipe – beef, chicken or turkey. The first step is to add flavor to the humble minced meat. In order to impart maximum flavor, you’ll need garlic, paprika, egg, and parsley. One of the key ingredients to keep the meatballs soft and juicy is fresh breadcrumbs. Store bought pre-made breadcrumbs are totally good in this recipe, however, I highly recommend using freshly ground breadcrumbs.
Once you combine all the ingredients together, roll out balls, lightly spray with cooking oil, and bake. You can also pan fry the meatballs if you like.
Make stroganoff sauce – You’ll need to make the classic sauce to go with meatballs. Start with sauteing onions, garlic and mushrooms. When they are soft, stir in tomato paste and dijon mustard. The addition of chicken stock (broth) is crucial for maximum flavor.
To thicken the sauce, you’ll also need to add cornstarch (corn flour) mixed with a little water also called cornstarch (corn flour) slurry. When the sauce thickens, you can add in meatballs and sour cream. I like to garnish it with plenty of chopped fresh parsley.
Serve – Just like regular stroganoff, you can serve this with your favorite side, mashed potato, pasta or rice.

Ingredients
Meatballs:
- 2 bread slices
- 500 g minced (ground) meat, (beef or chicken)
- 1 garlic clove, peeled and minced
- 1 teaspoon paprika
- 1 egg
- 1 tablespoon freshly chopped parsley
- Salt and pepper to taste
Stroganoff sauce:
- 2 teaspoons corn flour (cornstarch)
- 1/2 cup water
- 1 tablespoon oil
- 1 cup chopped onions
- 2 garlic cloves, peeled and minced
- 1 cup chopped mushrooms
- 1 tablespoon tomato paste
- 2 tablespoons dijon mustard
- 1 cup chicken stock (broth)
- 1/4 cup sour cream
- Salt and pepper to taste
Garnish:
- Chopped parsley
Serve:
- Mashed potatoes, pasta or rice
Instructions
Meatballs:
- Preheat oven to 200 C / 400 F. Line a large baking tray with parchment paper. Set aside.
- Place bread slices in a food processor. Process to fine crumbs. Set aside.
- Combine together minced meat, garlic, paprika, egg, breadcrumbs and parsley in a large bowl. Season with salt and pepper.
- Roll out balls, about 20.
- Place meatballs on the baking tray.
- Lightly spray with cooking oil.
- Bake for about 25-30 minutes. Alternatively, you can pan fry the meatballs.
Stroganoff sauce:
- To make corn flour (cornstarch) slurry, combine together cornflour (cornstarch) and water in a small bowl. Set aside.
- Heat oil in a large frying pan or skillet over medium-high heat.
- Add onions, garlic and mushrooms. Sauté, stirring occasionally, for about 3-4 minutes or until the onions are soft and mushrooms are tender.
- Add tomato paste, dijon mustard and chicken stock (broth). Stir to combine. Season with salt and pepper.
- Simmer for about 2-3 minutes.
- Add cornflour (cornstarch) slurry. Stir. Simmer for 5-8 minutes.
- When the sauce thickens, add meatballs and sour cream. Stir to combine. Heat through.
- Garnish with parsley.
Serve:
- To serve, place stroganoff sauce in a large bowl. Add meaty. Garnish with parsley. Serve with mashed potatoes, rice or pasta.
