One of the secret tips to getting the perfect crispiness is pat drying the chickpeas using paper towel or kitchen towel. This way, you can ensure that all the moisture is removed from the chickpeas.
The next step is tossing the chickpeas in your favorite seasoning. My spice mix includes ground cumin, paprika and red chili powder alongside a little garlic powder and a light drizzle of olive oil. However, feel free to use your favorite seasonings in this recipe like cajun, garam masala, chat masala, sumac, etc. And don’t forget the salt.

Crispy roasted chickpeas that's full of flavor and totally addictive!
Ingredients
- 2 x 400 g canned chickpeas
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin (cumin powder)
- 1 teaspoon paprika
- 1/2 teaspoon red chili powder or cayenne pepper
- Salt to taste
Instructions
- Preheat oven to 220 C / 430 F. Line a large baking tray with baking paper. Set aside.
- Drain and rinse chickpeas. Tip the chickpeas onto a kitchen towel. Pat dry to remove excess moisture. Remove all the loose skins.
- Transfer chickpeas to a large bowl.
- Add olive oil, garlic powder, ground cumin, paprika and red chili powder. Season with salt.
- Toss well until the chickpeas are well coated.
- Tip onto the baking tray.
- Arrange in a single layer. Bake for 20-25 minutes or until crunchy.
- Turn off oven.
- Leave the chickpeas in the oven for another 10 minutes. This will make them very crispy.
- Remove from oven.
- Leave to cool. Store in an airtight container.
- Serve as a snack or add to grazing boards for delicious appetizer idea. Toss them in salads or add as soup topping if you like.
Notes
- Experiment with other seasonings like cajun, garam masala, sumac, chat masala or Chinese five spice
- You can also air fry these chickpeas if you like
- If using dried chickpeas in this recipe, soak for 8 hours and cook until tender prior to baking them in the oven.
