Originally I was planning to make the basic fritters. But once I tasted them, I wanted to add a bit more flavor. And that’s where ground cumin comes in. It actually turned out to be a huge win-win.

The first two ingredients – flour and baking powder. Sift them to create light and airy batter. Combine this with egg, salt and pepper. To this, you will need to add all the veggies except corn. Feel free to choose your favorite to bring in different elements of color and texture. I have added spring onions for crunchy texture and bell peppers for vibrant color.
For the corn, I used canned ones – just rinse and pat dry with a paper towel to absorb all the moisture. And the final ingredient of this sweetcorn fritters recipe – ground cumin. You can also add a pinch of cayenne pepper if you love the heat.
Now, you can cook them your favorite way – shallow fry, air fry or bake. And serve them as a snack with yogurt dip, brunch alongside fried eggs, or as light lunch and dinner. Brilliant!

Ingredients
- 420 g canned corn
- 3/4 cup all purpose (plain) flour
- 1/2 teaspoon baking powder
- 1 egg
- 1/4 cup milk
- 2 teaspoons olive oil
- 2 tablespoons chopped spring onions (scallions)
- 1 teaspoon chopped green chilies (optional)
- 1 tablespoon chopped bell pepper (capsicum)
- 2 tablespoons chopped coriander (cilantro) leaves
- 1/2 teaspoon ground cumin (cumin powder)
- 2 tablespoons oil, to fry fritters
- Salt and pepper to taste
Yogurt dip:
- 1/2 cup yogurt
- 1 tablespoon lemon juice
- 1/2 teaspoon red pepper flakes (red chili flakes)
- Salt and pepper to taste
Instructions
- Drain and rinse canned corn. Pat dry with a paper towel. Set aside.
- Sift flour and baking powder into a large bowl. Add egg. Season with salt and pepper. Stir to combine.
- Add milk and olive oil. Stir to make smooth batter.
- Add spring onions (scallions), green chilies, bell peppers (capsicum), coriander (cilantro) leaves and ground cumin. Stir to combine.
- Add corn. Stir to coat corn in the batter. Set aside.
- Meanwhile, heat 2 tablespoons oil in a large frying pan over medium-high heat. Once the oil is hot, add 2 tablespoon mounds of corn mixture into the pan, spacing them at least 1-inch apart. Flatten them slightly. Cook the fritters 2-3 minutes on one side and then flip them over to cook for an additional 1-2 minutes or until the fritters are brown and crispy.
- Drain on an absorbent towel. Repeat with the remaining mixture.
- To make the yogurt dip, combine together yogurt, lemon juice and red chili flakes in a small bowl. Season with salt and pepper.
- Serve fritters with yogurt dip.
- For brunch, serve with poached or fried egg and mashed avocado or hummus. For lunch / dinner, serve these fritters with mashed potato, sauteed spinach, grilled vegetables or seasoned rice.
Notes
- You can also serve the fritters with tomato sauce or ketchup if you like
- Add more veggies like zucchini, green peas etc to make them more nutritious.
- Make it gluten free with gluten free all purpose (plain) flour
- This can be made vegan with almond milk or soy milk
- You can also bake or air fry these fritters. However, I highly recommend shallow frying them for extra crispiness.
