No matter the weather or the time of the year, fluffy rice loaded with veggies and flavored with spices is always a hit among kids and adults alike. This concept of flavoring rice with kale has been on my mind for a very long time. Even before I attempted the kale parathas. Once I made this kale rice, all I wanted to do was just share it with you because it turned out to be super delicious and super easy to make.
The key player in this rice, kale, makes it extra nutritious. It literally creates magic with rice. And the spices just add a wonderful finishing touch of flavor.
Try this easy kale rice. You’ll see it disappearing fast right in front of your eyes. Really fast, of course!
Heat oil in a large pan. Add cumin seeds. Allow to splutter.
Add garlic. Fry until lightly browned.
Add ground turmeric. You can also add a little chili powder if you want. Fry for a minute.
Add kale. Mix well. Cover with a lid. Cook kale. Stir occasionally.
Kale leaves are cooked now.
Add rice. Mix well. Stir continuously and reheat for 2 minutes. Remove from heat.

I tried this. Used turmeric, chili powder and cayenne. Was really yummy. Made falafel and salad. My friends loved it
