
You might be familiar with savory cutlets. If you like them, here is a sweeter version using banana for you to try.

Ingredients
- 1 large banana / ripe plantain steamed, cooled, and mashed
- ½ cup desiccated coconut
- ¼ cup rice flour
- 1 teaspoon ghee
- ¼ cup sugar
- ½ teaspoon cardamom powder
- 3 tablespoon plain flour
- 1 cup bread crumbs
- A pinch of ground turmeric
- Oil for deep frying
Instructions
- Place rice flour in a large bowl. Rub in ghee so that the flour will look like bread crumbs. Add in desiccated coconut, sugar, mashed banana, and make dough.
- Make small balls out of the dough, and shape them into cutlets. Keep aside.
- To prepare the batter, combine plain flour, ground turmeric, and enough water.
- Meanwhile heat oil in a deep bottomed pan. When the oil is hot enough, dip the prepared cutlets in batter, roll in bread crumbs, and deep fry. Serve.
Notes
I've used corn crumbs here to coat the banana cutlets. If you use bread crumbs, they will turn dark brown when fried.
